Mix the falafel dough with water and leave to rise for an hour. Use the cookie cutter to make small balls of dough and bake in hot sunflower oil until golden brown. In the meantime, for the sauce, mix tahini, garlic, lemon, caraway and a little water. Spread the burger halves with it. Then place the tomatoes and slices of lettuce and finally the fried falafels on top.
